A Spring Dessert You Have to Try!

Hello, All.  I just wanted to remind you of our next Spring event. I also wanted to share with you a fun, spring dessert that will “wow” your families. It’s a chance for you to look like an incredible cook with very little work.

I made this one at Easter and had to hide the last piece in my deep freeze. All it takes is ice cream (you pick the flavor combination) whipping cream and powdered sugar, caramel ice cream topping, and store bought cookies. (I used gluten-free cookies from Walmart.)

Choose your favorite ice creams and soften somewhat. I just left mine out of the freezer for about 10 minutes. Then I took a mixing bowl and dipped my main flavor into the bowl. It wasn’t quite 3/4 of the carton. Next, I put the chopped up cookies over the top of the ice cream. Then I drizzled caramel over the top of the cookies.

Then I took the next flavor and put it over the top of the caramel. I didn’t use quite half of the secondary flavor of the ice cream. You do what you want. You’re the fantastic cook here!

Then I let it freeze for a couple of hours. Just before I took it out of the deep freeze, I whipped the heavy whipping cream along with a 1/2 cup of powdered sugar. Then I took the frozen cake out of the freezer, let the bottom part of the pan rest in warm water for about 30 seconds, put it on a cold plate, and frosted it with the delicious whipping cream.

I should have sprinkled chocolate shavings over the top but I was too anxious to get it done. I had a bazillion other foods to get ready for the dinner. After it had frozen for a while, I covered it with plastic wrap.

Just before serving, I took it out for about 5 minutes. That’s it. Then I took a knife dipped in hot water and cut it! It was a hit and I saved back a piece for me for later. Easy and so fun! Use your imagination. I think next time instead of using chocolate cookies, I’m going to use crumbled up brownies.
